Several years ago I counseled with a thirty-two-year-old woman with profound anxiety. Her test results for gluten sensitivity were >100. In other words, laboratory test parameters did not exceed 100. The range of probable non-sensitivity were <15. These were the highest ranges that I had seen to that point and have yet to see. She agreed to a gluten, dairy and sugar-free diet until her two-week follow up appointment. In ten days she called me to say that she had experienced no anxiety for the previous three days, asking: “How is that possible?”
